Homemade Fettuccini Noodles step by step
- Measure the flour with a food scale for accuracy. If you do not have one, it's exactly 1 LB. I'm not a baker, I usually taste as I go and do not measure. However, pasta is the one thing I measure for perfection, EVERYTIME!!.
- I use my kitchen aid with a pasta attachment for this recipe, however, you can do it my grandma's way, on the counter, creating a well for the eggs and slowly mixing together by hand. And slicing with a sharp knife 🔪 into "ribbons"..

Then continue this process all the way to # 7, moving up 1 number at a time. Then attach your Fettuccini attachment and carefully roll your sheet through. Voila! You now have pasta! Note- add flour if it sticks at any point while rolling. More flour won't hurt!.
- If doing by hand, roll out as thin as possible, then roll-up each sheet like a fruit roll-up and slice to preferred thickness of noodle. Example: Fettuccini like I did, or thicker like Pappardelle..
